I'm not a professional canner by any means, but I've canned a few things, and only a few never sealed from the boiling method, and even with sending them overseas only a few more popped before making it to their destination. I wouldn't waste money on a pressure canner unless you're doing a large quantity all the time.

my mom has been glued to the kitchen for the last month canning/pickling her hot pepper bounty of habaneros, ghost peppers, and whatever other 47 varieties she has in the garden. when she gets sick of that she dries them in the oven and grinds them. i HATE that smell

two stolen/slightly altered from my man Alton Brown:

1. cut a shit ton of plum tomatoes in half, scoop out the guts with a spoon, put in glass baking dishes. add oregano, thyme, basil, salt, pepper, roughly chopped garlic, diced onions, olive oil (in that order so the herbs and pepper don't burn). cook at 350 until carmelized. run through a food mill into a bowl (you can borrow mine if you want). stir with some vodka or white wine

2. take one of those really big cans of whole peeled tomatoes. strain the liquid into a saucepan, add garlic, white wine and italian herbs and simmer until it becomes a syrupy paste. meanwhile seed the tomatoes, add chopped onion, salt, olive oil and more garlic and broil until carmelized. once the tomato syrup is thick enough, add the broiled tomatoes, season to your liking, blend until desired consistency

been canning for a couple yrs now love it had my first real failure the other day cann refried bean and they all exploded. super pist!!! but I found a different recipe and im going to try it again.

also made hops pickles this yr jusy cracked one open... super good
